Tabchili Hot Sauce Chicken Sandwich

 

Recipe: Tabchilli Hot Sauce Crispy Chicken Sandwich

Amount Produced: 1-PORTION

Ingredients:

  •  1 pc Brioche Burger Bun
  • 1 pc Crispy Crumb Chicken Thigh (from recipe “Chicken Thigh”) 
  • 20 g Arugula Lettuce 
  • 25 g Pineapple Relish (from recipe “Pineapple Jalapeno Relish”) 
  • 25 g Spicy Tabchili Hot Sauce (from recipe “Spicy Tabchili Hot Sauce”) 
  • 30 g Mix Mozzarella cheese 
  • 20 g Pickled Cucumber(slice) 
  • 10 g Red Onion(finely slice)
  • Garden Salad(on side)

Procedure:

  1. Deep fry the chicken thigh until golden brown, top with cheese sauce, and place in the oven for 2 minutes.
  2. Toast the bun and start to assemble the burger.

Recipe: Spicy Tabchili Hot Sauce 

Amount Produced:1.3kg

Ingredients:

  • 1 kg Red pepper Capsicum 
  • 50 g HOT SAUCE DUBAI Paste 
  • 40 g Coriander 
  • 20 g Garlic 
  • 5 g Black Pepper 
  • 80 g Honey 
  • 250 g White Vinegar 
  • 30 g Olive Oil 
  • 20 g Sugar white 
  • 20 g Paprika Powder 
  • 10 g Salt

Method:

  1. Rough chop red pepper, coriander, blend together with black pepper, garlic, olive oil, and white vinegar.
  2. Place in a pot and cook on medium heat for 30 to 40 minutes; add sugar, salt, paprika, HOT SAUCE DUBAI paste, and honey to taste.

Recipe: Pineapple Jalapeno Relish

Amount Produced: 550g”

Ingredients:

  • 140 g Jalapeno whole 
  • 400 g Pineapple slice(chopped from can) 
  • 100 ml pineapple juice(from can) 
  • 140 g White onion small diced cut 
  • 2 tbsp Olive oil 
  • 2 tbsp Sugar white 
  • 2 tbsp White balsamic 
  • 1/2 tbsp coriander seeds pinch – salt and pepper to taste

Method:

  1. Toast the coriander seeds until golden and fragrant then grind into powder
  2. Char the jalapeno over the open flame until black, then roast at 190 for 8 minutes with little olive oil and salt; remove seeds and skin
  3. Saute the onion in olive oil with salt and pepper until soft.
  4. Add all other ingredients and add 50 ml water approx; simmer for 30 minutes until soft and thick

Recipe: Chicken Thigh 

Amount Produced: 1.1kg(11 portions)

Ingredients:

  • 1.1 kg Chicken Thigh(100 to 110g each) 
  • 3 g Salt pinch – Pepper Cracked 
  • 30 ml Olive oil 
  • 3/4 cup Spicy Tabchili Hot Sauce (from recipe “Spicy Tabchili Hot Sauce”) 
  • 85 g Panko crumbs 
  • 75 g Flour AP 
  • 3 pcs Eggs beaten

Method:

  1. Clean the chicken thigh then rub with salt, pepper and olive
  2. Deep fry the chicken thigh until golden brown, top with cheese sauce, and place in the oven for 2 minutes.
  3. Toast the bun and start to assemble the burger with arugula lettuce, pineapple relish, spicy Tabchili Hot Sauce, mix mozzarella cheese, pickled cucumber, and red onion.
  4. Serve with a garden salad on the side, and enjoy!
